Ingredients

  • 300g Selen VIEW IN SHOP Arrow Icon
  • 80g Nonna Rachele Delipaste VIEW IN SHOP Arrow Icon
  • 80g Pastovocrem VIEW IN SHOP Arrow Icon
  • 100g Brandy
  • 200g Cream
  • 400g Milk
  • 10g Nutmeg powder
  • 10g Cinnamon powder
  • 5g Cloves powder
  • Dust with Cinnamon powder

Method

  • Whip the cold milk with Selen Fabbri and the vanilla gelato in the stand mixer.

  • Start whipping at a lower speed and gradually increase up to speed 8 or 10.

  • As air builds up, the cream becomes lighter—watch for soft peaks to form, which takes around 6–7 minutes.

  • Create layers alternating between gelato and whipped Selen semifreddo for a rich, creamy texture.
